I love ginger cookies, and these incorporate ginger two ways to make them extra ginger-y.  These cookies are soft and chewy and are perfect with a cup of tea or a big bowl of icecream!

Seriously Ginger Cookies 

  • 3 cups flour
  • 4 tbl light brown sugar
  • 1 tbl baking powder
  • 1 tsp baking soda
  • 1 1/2 tsp ground ginger
  • 1/3 cup molasses
  • 2/3 cup agave
  • 1/2 cup vegetable oil
  • 1 tsp vanilla
  • 1/2 tsp salt

Topping

  • 2 tbl crystallized ginger, ground fine
  • 5 tbl sugar

Instructions:

  1. Preheat oven to 350F.
  2. In a large bowl, combine the flour, brown sugar, baking powder, baking soda, ground ginger and salt.  Mix well.
  3. In a medium bowl, combine the molasses, agave, oil, and vanilla.  Mix well.
  4. Add the wet ingredients to the dry ingredients and mix thoroughly.
  5. In a small bowl, combine the ground crystallized ginger and sugar and mix well.
  6. Roll the cookie dough into 1″ balls, then roll the balls in the crystallized ginger mix.
  7. Place the cookies on a cookie sheet and flatten slightly with the palm of your hand.
  8. Bake for 10 minutes.  Let cool for 5 minutes on the baking sheet, then move to a cookie rack.
