Apricot Chocolate Chip Quick Bread
A quick bread packed with dried apricots and chocolate chips. Oil-free.

  1. Preheat oven to 350F. Lightly grease a loaf pan.
  2. In a large bowl, combine the flax seed, flour, baking powder, baking soda, salt, and sugar and mix well.
  3. Make a well in the center of the dry ingredients and add the non-dairy milk, vanilla, applesauce, and lemon juice. Mix until completely combined.
  4. Fold in the dried apricots and chocolate chips. Pour into prepared pan.
  5. Bake 45-55 minutes or until toothpick inserted in center comes out clean.
  6. Let cool 10 -15 minutes than carefully turn out from loaf pan. Slice and enjoy.
