In a food processor, pulse the dates until they form a chunky paste. You can also use a blender but might have to do it in batches.
Add the dates, sugar and non-dairy butter to a large saucepan and bring to a boil. Turn down to low simmer and cook for about 5 minutes, stirring constantly. (sugar should be completely melted)
Take pan off the heat and add the cereal and vanilla. Mix until very well combined.
Let cool until it is able to be handled with bare hands. You don’t want it completely cold or it will be hard to roll in balls.
While still warm, and working quickly, roll the cereal into 1″ balls, pressing the mixture together tightly so it stays together. Really squish it!
Drop balls in bowl of powdered sugar and roll around to coat it.
Can be served immediately or in an airtight container in the fridge for 2 weeks or at room temp up to 4 days.
