Grilled Tempeh and Veggies | The Lazy Vegan Baker

BBQ season is here in the North East US and while I usually shy away from things that may explode, I decided to throw caution to the wind and fire up the grill. Making awesome food helps!

This month’s Recipe Redux challenge was to make and share something from a fellow Redux blogger and I’ve picked two extremely easy recipes from two of my fav vegan bloggers to start the summer off right, Tempeh Kebabs from Vie de la Vegan and a Milkshake from Rock My Vegan Socks.

Vegan and BBQ are two words that you’d think wouldn’t go well together. And honestly, many times it doesn’t. Unless the vegan is running the BBQ; then it is a wonderful combination with mouthwatering results. And it’s easy, oh so easy (otherwise I wouldn’t attempt it)!


The Vegan Grilling Supplies Checklist

  1. Awesome marinated veggies & tempeh, preferably in kebab form and with plenty to share (because you know once it starts grilling, everyone will be asking!).
  2. Foil or barbecue grilling sheet to cover the grill because who knows what’s been cooked on there previously.
  3. Oil spray so your amazing food doesn’t stick and become a disaster.
  4. Dedicated, vegan-only, tongs and a spatula for flipping and arranging and poking.
  5. A big happy smile because you’re grilling like a queen and radiating empathy like nobody’s business.

Tempeh Kebabs Notes: I used slightly different veggies; feel free to choose the ones you like on the grill. I also tripled the amount of veggies and marinade. Annnd, being a total space cadet, I forgot the Kebab skewers so actually, I didn’t make kebabs, I just grilled them. Not as pretty but just as delicious!

The marinade is so simple, I couldn’t believe how flavorful it turned out and how perfect it was with the veggies. It really blew my mind. Anyone can do this, seriously, and if you’re not so into the grill, you can always cook them in the oven, Kyra has instructions with the recipe on how to bake them.

 

Milkshake Notes: I didn’t have almond butter so used a little bit of peanut butter. I added a bunch of ice to give it a thicker, colder, milkshake-y feel plus I love crushed up ice. It was amazing! It was super filling too; it could almost be a meal all on it’s own. And any other day, it may have, but then there were all these divine grilled veggies taunting me, so I had to put the milkshake down.

  1. Awww Jenny! Thank you so much for making my kebabs (or skewerless grilled tempeh & veggies 😀 which look incredibly amazing, by the way)! And this is such a coincidence, as for my Redux post I chose to make Kimmy’s milkshake too!
    And I’m so glad I’m not the only “vegan freak” who has vegan-only tongs (and many many other kitchen utensils!) – I don’t know if other vegans do the same thing, I thought I was just a bit OCD about it…haha.

      Thank you for making such a simple and awesome recipe! Seriously, I couldn’t believe the flavor with such few ingredients.

      That is SO funny you made Kimmie’s milkshake recipe too. Must be something in the air with vegans craving milkshakes lol! And you by far are not the only “freak”, I have a whole dedicated cupboard with my pots and pans, cooking utensils, silverware, plates, cups and especially cutting boards that are vegan-only :-D.
