I love ginger cookies, and these incorporate ginger two ways to make them extra ginger-y. These cookies are soft and chewy and are perfect with a cup of tea or a big bowl of icecream!
Seriously Ginger Cookies
- 3 cups flour
- 4 tbl light brown sugar
- 1 tbl baking powder
- 1 tsp baking soda
- 1 1/2 tsp ground ginger
- 1/3 cup molasses
- 2/3 cup agave
- 1/2 cup vegetable oil
- 1 tsp vanilla
- 1/2 tsp salt
Topping
- 2 tbl crystallized ginger, ground fine
- 5 tbl sugar
Instructions:
- Preheat oven to 350F.
- In a large bowl, combine the flour, brown sugar, baking powder, baking soda, ground ginger and salt. Mix well.
- In a medium bowl, combine the molasses, agave, oil, and vanilla. Mix well.
- Add the wet ingredients to the dry ingredients and mix thoroughly.
- In a small bowl, combine the ground crystallized ginger and sugar and mix well.
- Roll the cookie dough into 1″ balls, then roll the balls in the crystallized ginger mix.
- Place the cookies on a cookie sheet and flatten slightly with the palm of your hand.
- Bake for 10 minutes. Let cool for 5 minutes on the baking sheet, then move to a cookie rack.
