  2. OK, you made me want to go bake something. It is so hot here, though, so I don’t want to turn the oven on. I think I’m going to have to try some of this out, though. All your pics are beautiful– mouthwatering!

  3. OK, Jenny. I have a request… since you are now my favorite chef. Next week is my bday, and I would like to make something resembling strawberry shortcake. I was wondering if you had any inspiring ideas up your sleeve?

    1. Oh my goodness, I somehow missed this!! So sorry! It’s probably too late, but strawberry shortcake is pretty easy to make vegan. For any shortcake recipe you can replace the butter with vegan butter or margarine and replace the milk with a dairy free option. Then, I always macerate the strawberries – smash them up with a little bit of sugar and let them sit for a few hours. Really brings out the flavor of the strawberries! And then top with some coconut whipped cream..mmmm. Hope you had a great birthday and sorry I was behind the game a bit.

      1. No worries! I ended up doing something really similar to this. I live in a small town, so I used vanilla flavored coconut ice cream instead of coconut whipped cream, which I didn’t even know existed. It was close enough! It came out pretty good. I had a great birthday.

        I know what you mean about being behind! Thanks for replying anyway. I’m going to try the coconut whipped cream next time, if I can find some!

        1. You can make your own coconut whipped cream. Take a can of coconut cream or full fat coconut milk, put it in the fridge for several hours. Do not shake the can. Open and scoop out the solidified part, put in a mixer and whip like you’d do regular cream. I need to post this on the blog!! πŸ™‚
