It looks like a lot of work but honestly, it’s not. Some simple planning is all that’s needed and you’ll be indulging like you’re queen of the world. Make it to impress dinner guests or to celebrate a special occasion. No one needs to know how long it really took to create :-D.

  1. Dulce de Leche can be made a day or week or week ahead of time to have on hand. This recipe takes about 5 min of actual effort to make.
  2. The Peanut Butter Nice Cream takes 5 min to make and 8 hours to chill,  so make a day or week or even month ahead of time.
  3. The Apple Bars take about 10 minutes to put together and 45 min to bake.

Time doing actual work in the kitchen – about 30 minutes. Sweet!

Ingredients
  • Apple Filling
  • 4 apples, peeled and sliced
  • 2 teaspoons lemon juice
  • 1½ tablespoons all purpose flour
  • ¼ cup maple syrup
  • ¼ teaspoon ground ginger
  • Oatmeal Crumble
  • ¾ cup all purpose flour
  • 1 cup rolled oats
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • ⅓ cup packed light brown sugar
  • ½ cup vegan butter
Instructions
  1. Preheat oven to 375F. Line an 8x8 baking pan with foil and spray lightly with oil. Or just spray pan with oil. Lining it with foil makes it easier to remove the bars.
  2. For the Apples:
  3. Combine all the filling ingredients in a large bowl and mix well. Set aside.
  4. For the Oatmeal Crumble:
  5. Combine the flour, salt, baking soda, and brown sugar together in a medium bowl.
  6. Cut in the vegan butter with a pastry blender or two knives until it is mostly pea sized.
  7. Assembly:
  8. Press half the crumble mixture evenly into the prepared pan.
  9. Spread all the apples on top.
  10. Arrange remaining crumble evenly on top.
  11. Cover with foil and bake 20 minutes.
  12. Remove foil and bake for another 25 minutes or until apples are bubbly and crumble is lightly browned.

    1. Thanks! Ginger and apple is one of my favorite combinations. If you like ginger a lot, you can increase the amount in the recipe. I often do because I looove ginger, but kept it light for the actual recipe since it can be quite overpowering for more sensitive taste buds.
