So, after my last post, with those uber rich, addictive, very not-healthy cookies that I ate a ton of, I needed this smoothie. Chocolate Covered Cherry Smoothie to the rescue! It’s healthy, easier to whip up than a batch of cookies, and wonderfully satisfying.
This recipe is from Becky Striepe’s newest ebook, 40 Days of Green Smoothies: Kickstart your mornings with this 40 day program designed to develop your green smoothie habit!  I am loving the recipes for their uniqueness (parsley, avocado, lettuce!) but also because of how ridiculously simple they are to make. This smoothie has 6 ingredients and you toss ’em all in your blender, give it a few whirs, and smoothie happiness is yours.
I’m giving away a copy of 40 Days of Green Smoothies, so if you want to get started on an easy green smoothie journey, be sure to enter at the end of this post.
This Chocolate Covered Cherry Smoothie has parsley in it as it’s green element. I have to admit, it had me a little worried, but it turns out, you can’t even taste it. The smoothie is rich and bright with flavor and no weird “green” taste at all. Â I enjoyed it thoroughly and when it was gone, I was disappointed, so I made another one :-D.
All the smoothies in 40 Days of Green Smoothies focus on getting more green in your body by hiding them among awesome flavor combos. The 40 days are broken into weeks and each week offers tips and shopping lists for your convenience. Some of the other recipes you’ll find are Banana Fresh Berry (featuring parsley and chia seeds), Cherry Tangerine (with hidden avocado and spinach!), Spicy Mango Tango (with spinach, chia and ginger) and the Coconut Blackout Smoothie (it’s got lettuce in it!).
If you’ve wondered how to get your kids to eat more veggies, I’ll bet they will happily drink them up in these smoothies. Or maybe you’re a grown kid trying to get your elderly mom to eat better. Or maybe you’re a full-on grown up adult who needs to trick yourself into getting all your veggies. Whatever the case may be, this book will make it SO much easier! Give it a try :-D.
