About Puff Pastry
Traditionally puff pastry is made with butter. However, many store-bought brands of puff pastry use vegetable shortening, making them “accidentally vegan.” That works for me! Of course, it’s not healthy or any of that, but the holidays are meant for a little indulgence ;-).
Make sure to read the ingredients of the puff pastry before buying to ensure you’re getting a non-dairy one.
Tips For Working with Puff Pastry:
- Plan in advance; puff pastry needs to thaw for 30-60 minutes before using.
- The key to a good rising puff pastry (those wonderful flaky layers) is cool to cold dough. Warm pastry dough won’t be as puffy or have as many layers.
- If the dough gets too soft or warm when you’re working with it, just pop it in the refrigerator for a little bit.
- To prevent the dough from getting too warm, have all the components prepped and ready to go in advance.
- Once you’ve cut the squares, lay them on the baking sheet for assembly — this reduces the chances of fumbles while moving them later.

- 1 14 oz can jellied cranberry sauce
- 1/2 cup water
- 1/3 cup apple cider vinegar
- 2/3 cup ketchup
- 1 tablespoon molasses
- 1/2 cup packed light brown sugar
- 1/4 teaspoon pepper
- 2 1/2 teaspoons dry mustard
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 1/4 cup chipotle pepper
- 1/2 teaspoon ground cumin
- 1 pkg puff pastry
- 1 pkg Big Mountain Foods Mushroom Bites
- 2 baked potatoes
- fresh parsley
- 1/4 cup unsweetened non-dairy milk
- 1/2 cup fresh cranberries

- To make the bbq sauce, put all the ingredients in a small saucepan and bring to a simmer.
- Stir well with a whisk so all ingredients are well combined.
- Low simmer for 20 minutes, stirring occasionally. Taste test for heat level -- add more chipotle if desired.
- Let cool completely before using in puff pastry boats. Store in a glass jar or airtight container in the refrigerator for up to a month.
- Take puff pastry out of the freezer 30-60 minutes before using.
- Prep the potatoes by carefully peeling and cutting them into 1/8-1/4 inch slices. Trim down the edges, if necessary, to make them approximately the same diameter as the Mushroom Bites.
- Cut each of the Mighty Mushroom Bites in half lengthwise, so they are two thin rounds.
- Preheat oven to 425F.
- Line a baking sheet with parchment paper or a silicone baking sheet.
- When the puff pastry is thawed, unroll it gently.
- Cut each pastry sheet into 9 equal squares (most puff pastry is folded in thirds; you can cut it vertical down the fold lines, and then into thirds horizontally).
- Use a fork to pierce the center of each square a few times. Only prick the centers -- it prevents the dough from pushing the filling out as it bakes.
- Put a small dollop of BBQ sauce in the center of each square.
- Next, add the potato slice, then the Mushroom Bite. Spread another dollop of bbq sauce over the mushroom patty.
- Place two fresh cranberries on the top, and two little sprigs of parsley.
- Brush the exposed portions of the dough with the non-dairy milk (this brings out the golden brown crust color).
- Bake for 14-16 minutes, until the pastry is puffed up and fully deep golden brown. Don't settle for light brown; that is undercooked. Bake for a minute or two longer, if needed.
- Let cool 5-10 minutes before serving. Serve with a side of cranberry BBQ dipping sauce.
- The cranberry barbeque sauce can be made days, or even weeks, in advance.
- Use a leftover baked potato, or do a quick-microwave baked potato --> pierce the potato a bunch of times, wrap it in two layers of damp paper towels, and microwave in 1 minute increments until the potato is al dente (be careful handling it -- hot potatoes are hot!).
- One package of puff pastry should equal approximately 18 pastry boats (9 from each sheet).
- To make Mighty Mushroom Puffed Pastry Boats in advance, assemble all the way through step 10, minus the BBQ sauce topping. Place the pastry boats in a single layer on a plate or cookie sheet in the freezer. Once they're frozen through, put them in a plastic bag or wrap in aluminum foil for longer storing.
