Gingerbread Cake with Lemon Icing

This gingerbread is rich and dark without being to sweet and the lemon adds the perfect contrast to the spiciness of the cake. Β Best of all, it’s super easy to make and goes great with a cup of tea or coffee.

Gingerbread Cake with Lemon Icing

Rich and spicy gingerbread cake with tart lemon icing.

Serves: 12
Ingredients
  • ½ cup molasses
  • 1 cup sugar
  • ½ cup vegan butter or margarine
  • ¾ cup hot water
  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ teaspoon ground nutmeg
  • ¾ teaspoon ground ginger
  • 1 tablespoon ground flax seed
  • ½ cup powdered sugar
  • 1 tablespoon fresh lemon juice
  • zest of 1 lemon
Instructions
  1. Preheat the oven to 300F. Lightly grease and flour an 8x8 baking pan.
  2. In a Β medium saucepan, heat the molasses, sugar and butter just until all the butter is melted, then remove from heat.
  3. Add the hot water, mix well and then let cool completely.
  4. In a medium bowl, mix together the flour, baking powder, salt, nutmeg, ginger and flax seed.
  5. Add the molasses mixture to the flour and stir until completely combined.
  6. Pour batter into prepared pan and bake for 35-40 minutes or until toothpick inserted in center comes out clean.
  7. Let cool 10 minutes in pan and then turn out and let cool completely on a wire cooling rack.
  8. When cake is completely cooled, whisk the powdered sugar, lemon juice and zest together until smooth and spread over cake.

Mix all the dry ingredients together.

Add wet ingredients to dry.

Mix until smooth.

Pour into prepared pan.

    1. Thanks! One of my favorite combinations too – really anything with ginger! I’ve have to look into that bloglovin and will let you know if I add my blog πŸ™‚

  2. Wow, that brought back some memories! My mom used to fix this as a desert (out of a box) 30 odd years ago. I will have to try this.

    1. Thanks! That’s actually what happened when I made it – there are no pics of the cake as a whole because I had to make myself stop eating it to take pics haha
