Boozy Pops | The Lazy Vegan Baker

With produce galore, now’s a great time to enjoy lots of fruits and vegetables. Show us how you’re serving the bounty of gardens and orchards in shapes like ribbons, noodles, cut-outs, or other creative cuts.

So, I decided to show the fun I’ve been having with popsicles, my favorite shape to enjoy fruit in this dreadful summer heat. I found these popsicle molds at a discount store and am in love with them. They are separate molds, but attach together for stability and have good feet so you don’t have to worry about them tipping over. The reason I like that they can be separated or attached is so that you can make one at a time, if you want, like in my house, as soon as we finish one it is filled immediately again so there is never a popsicle shortage. Plus, the shapes are cute :-D.


These recipes are super easy, all you need is a blender, some simple ingredients, popsicle molds (or small paper cups if you don’t have specific molds), and a relaxing summer is yours!


Because alcohol has a lower freezing point than juice or water, if you add to much, your popsicles will be more slush than pop. The general rule of thumb is 1 1/2 ounces per cup of juice. 


If you don’t imbibe, you can replace the alcohol with a favorite fruit juice or water.


Let the popsicles freeze for a minimum of 24 hours. Be gentle when unmolding – they will release a lot faster and easier than regular popsicles because of the alcohol.


Strawberry Chocolate Fudgesicles

Serves: 6
Ingredients
  • STRAWBERRY CHOCOLATE FUDGESICLES
  • 2 cups fresh strawberries
  • 75 ml white rum
  • 2 tablespoons cocoa powder
  • ¼ cup non-dairy milk
  • 2 teaspoon maple syrup (or agave nectar)

  • WATERMELON BASIL POPSICLES
  • 2 cups fresh watermelon
  • 8 -10 basil leaves (to taste)
  • Juice of ½ lime
  • 1 tablespoon maple syrup (or agave nectar)
  • 75 ml tequila

  • PEACH COCKTAIL POPSICLES
  • 3 peaches, peeled and pitted
  • 1 tablespoon maple syrup (or agave nectar)
  • 50 ml vodka
  • juice of 1 lemon
Instructions
  1. For each one: Put ingredients in a blender and puree until smooth.
  2. Add additional fresh fruit if wanted.
  3. Fill popsicle molds and freeze.
Notes
This makes 6-8 popsicles depending on the size of your molds. You can always double or triple the recipe to make more :-D.

You can add extra chunks of fruit to the molds before filling them with the puree for added texture and visual appeal.
